Girl Scout Thin Mints Mango Pot Pie

Ingredients to Serve-6

Ingredients

2 large mangos peeled and diced
2 tbs. Sugar
1 tsp. ground cinnamon
1/4 tsp. ground allspice
2 tbs. Orange juice
1 cup light brown sugar
2 large egg whites
½ Box Girl Scout Thin Mint cookies, broken by hand
1 cup Chopped pecans
1 tsp. Vanilla

Preparation

To Prepare the Mango Pot Pie:
Slice the mango into 2 inch pieces and place these in a bowl. Add the sugar, cinnamon, allspice and orange juice mixing the filling together. Spoon the mango filling into 6 individual oven proof pyrex cups.

To Make the Mint Praline Topping and Bake:
Preheat the oven to 350 degrees. Sift the light brown sugar in a bowl. Separately whip the egg whites and fold them into the sugar. Add the broken mint cookies, pecans and vanilla. Place topping on pot pies and bake at 350 for 25 minutes. Remove from oven and cool for 5 minutes. .
