Ingredients to Serve-4
 1/2 pound cooked Chicken diced in large chunks
 1/2 cup Celery, Diced
 1/2 cup Yellow Peppers, diced
 1/2 cup Red Onion, diced
 1/4 cup Raisins
 2 tablespoons Parsley, chopped
 1/2 cup Mango Ketchup
 1 head Lettuce, shredded
 2 tablespoons Sunflower Seeds, toasted
To Prepare the Salad:  In a large mixing bowl, combine the chicken, celery, pepper, onion, raisins, parsley, and ketchup.  Toss together to incorporate well.  Cover and refrigerate for ½ hour.
To Serve:  Divide the lettuce on individual plates.  Spoon the mango chicken salad into the plates and top with toasted sunflower seeds.
