This is simple comfort food in our house. Turkey meatloaf has always been a favorite of mine. The addition of the my mango ketchup easily enhances the flavors. My kids demand it almost once a week.
 Ingredients to Serve-4-6
 2 pounds Ground turkey meat
 1/2 teaspoon Thyme
 3 cloves garlic, minced
 1 small onion, minced
 1 cup cracker crumbs
 2 teaspoons kosher salt
 1 teaspoon ground black pepper
 1 cup Chef Allen's mango ketchup 
To Prepare the Meatloaf: In a small bowl combine the turkey, thyme, garlic, onion, cracker crumbs, salt, pepper and 2 tablespoons of Mango Ketchup.  Mix well and shape into a loaf.  Place it  into a teflon meatloaf pan.  Preheat the oven to 350 degrees.  Place the meatloaf into the oven and bake for 40 minutes.  Spread 3 tablespoons of  Mango Ketchup on top and finish baking for 5 more minutes until well glazed.
To Serve:  Remove the meatloaf from the oven and let it rest for 5 minutes. Turn the turkey loaf out of the pan and cut into 1½ inch thick slices. Serve  with mango ketchup.
