Pan Roasted Wild Florida Shrimp & Mango Chatni

Description

Ingredients to Serve-4

Ingredients

3 Tablespoons Olive oil
1 Cup Diced frim ripe mango
½ Cup Diced papaya
1 Large key lime, juiced
1 Large Piece of ginger- peeled and grated
1 Medium Jalapeno chili- seeded and minced
5 leaves Mint, Freshly torn
½ Teaspoon Tangerine zest
½ Teaspoon Freshly Ground Black peppercorns
1 Teaspoon Kosher Salt
½ Teaspoon Ground Cumin
16 Jumbo Shrimp, peeled,deveined and cleaned
1 Teaspoon Minced Garlic
4 sprigs Fresh Cilantro

Preparation

To Prepare The Chatni: In a heavy skillet warm the olive oil over medium heat.. Stir in the mango, papaya, lime juice, ginger, and jalepeno. Cook slowly for about 5 miniutes until all the liquid is absorbed. Remove from heat and mix in freshly torn mint leaves

To Cook the Shrimp: Combine the tangerine zest with the black pepper, salt and cumin. Gernerously, season and rub spice mixture over all of the shrimp.In a medium sized sauté pan, warm the remaining olive oil over high heat. Just before it starts to smoke, add in the shrimp. Sear the first side lightly and add the garlic. Lower the heat and continue to cook for 2 minutes on the other side, until rosey and golden brown.

To Finish and Serve: Place the mango chatni in the center of the plate and arrange the shrimp around . Garnish with freshly picked leaves of cilantro
