Green Mango Slaw

Description

This is a fusion slaw. Though you might find this flavor profile deep in the streets of Malaysia. I feel it goes great with bbq ribs. In the Caribbean this would be a green mango chow - although we would probably take out the fish sauce in the recipe and add more crushed hot chiles.

Ingredients to Serve- 1 quart

Ingredients

2 large Green mangos, peeled, pitted & shredded
1 large Carrot, peeled and shredded
1 small Red onion, thinly sliced
2 tablespoons Roughly chopped fresh mint
2 tablespoons Roughly chopped fresh basil
3 tablespoons Roughly chopped fresh cilantro
1 teaspoon Minced garlic
1/4 cup Lime juice
2 tablespoons Sugar
1 teaspoon Minced serrano chilies
2 tablespoons Fish sauce

Preparation

To Prepare the Slaw: In a large bowl combine the mango, carrot and onion. Toss together with the fresh mint, basil and cilantro. In a small bowl, combine the garlic, lime juice, sugar, chili and fish sauce. Mix until sugar is dissolved. Pour the lime mixture into the slaw and toss together coating well. Cover and refrigerate for about one hour.
